Answer: Watch their top growth. When the plants are in full flower, you can harvest a few new potatoes. Once the tops die to the ground, you can dig the mature baking-size tubers. Eat them as you wish, and store the rest cool and dry. Save the small potatoes as seed potatoes for your fall garden. Nurseries almost never handle seed potatoes for the late summer planting.
