Answer: They have a wide margin for error. You can harvest bell peppers, for example, while they’re somewhat immature and green, or you can wait until they turn their mature red, yellow or other color. Jalapeños, as other examples, will be deep green while they’re young, then yellow and red as they ripen. Flavor will vary through the maturation of any pepper, so harvest at your favorite stage.
