Question: When is asparagus harvested?

Answer: When the stems shoot out of the ground in late winter and early spring, you can cut them with an asparagus knife. Be careful that you don’t damage adjacent stems, and harvest only for 6 or 7 weeks. Quit by April, so the plants can grow and produce bigger and better roots systems, to propel the following year’s shoots.
